You need the following ingredients for 4 people
- 2 cloves of garlic
- 500g peas
- 100 g whole wheat flour
- 1 egg (size M)
- Salt
- pepper
- 1 tsp ground cumin
- 1 eggplant (approx. 300 g)
- 1 zucchini (approx. 250 g)
- 1 small red, green and yellow pepper each (approx. 150 g each)
- 2 tbsp olive oil
- Juice and zest of 1 organic lemon
- 5 stalks of chervil
- 1/2 bunch of chives
- 250 g low-fat quark
And this is how the preparation works
- Peel the garlic and puree it with the peas. Mix in a bowl with flour, egg, 1 teaspoon salt and cumin. Let it soak for about 30 minutes.
- Clean and wash the eggplant, zucchini and peppers. Slice the eggplant and zucchini lengthways and cut the peppers into strips.
- Form 8-10 equally sized patties from the pea mixture. Fry on the hot grill or in the grill pan for 3-4 minutes per side.
- Mix the oil, salt and pepper into the vegetables and grill on the grill for about 5 minutes while turning. Just before serving, drizzle with half the lemon juice.
- Wash the chervil and chives, chop the chervil roughly and cut the chives into fine rolls. Set aside a little for garnish. Mix the remaining herbs with the quark, lemon zest, remaining lemon juice and 1/2 teaspoon salt.
- Arrange the pea patties, grilled vegetables and some herb quark on plates or a platter. Garnish with the remaining herbs and serve with the remaining quark.
