Your own permaculture garden plays a big role in this. The chef is only too happy to find culinary inspiration in the Alps-Adriatic region, which will delight TennisTraveller Joshua's recipe is traditional and yet reinterpreted : the very healthy Ritschert , which represents Carinthia like strawberries with cream represent Wimbledon.

We asked the Brennseehof Joshua Mitterer a few questions about slow food and Alpine Adriatic cuisine. Read how the hotel puts these two things into practice every day.
My favorite products come directly from next door: fresh vegetables and herbs from our in-house permaculture garden. It's fun that you get to know the entire cycle of growth and (re)processing through our permaculture garden. Permaculture, in which people, animals and plants support each other, corresponds 100% to our company's philosophy, in which sustainability is a central idea.
We source the majority of our products directly from the region. The more regional, the better. It is important to us to work closely with our regional farmers, who also make a significant contribution to landscape conservation, especially in tourism.
A brief overview of our regional suppliers would be welcome:
On the one hand, this cuisine is down-to-earth, close to home and also conscious of tradition, but on the other hand there is always an international touch. Traditional dishes are often reinterpreted, but the origin of the dish should always be clearly recognizable. Due to the southern location of our federal state and the proximity to Italy and Slovenia, these Mediterranean influences are often present.
Vegetarian Ritschert. Ritschert is one of the oldest dishes and brings back childhood memories for some people. It is considered very healthy and is particularly popular as a vegetarian version
Carinthia stands for hospitality, cuisine and closeness to home. This is particularly reflected in our rustic alpine huts. Here you slide together, you're on a first-name basis and it's a meeting place for young and old. Accordingly, the food is more down-to-earth and close to home. You should definitely try 'Grantnmilch' (Grantn = cranberries with fresh buttermilk) or 'Glundner Kas' (special cheese with caraway).
Brennseehof 's chef Joshua Mitterer has a dish for us to cook that couldn't be more typical of Carinthia. Nevertheless, it is a little different, as Joshua presents the Ritschert in a vegetarian version.

Whether summer or winter: the Brennseehof is the ideal holiday destination for families, but also for sports-loving holidaymakers. A variety of sports await you right in the resort and you can go hiking and biking from our resort. In winter, the nearby ski areas and the two ice skating rinks right next to the Brennseehof are attractive. And on cold days, the lake with its thick ice cover is open to all ice skaters, ice dancers and hockey players.
The family-run resort is truly an Eldorado for tennis players. With a total of 12 tennis courts - 10 sand and 2 quartz sand courts - as well as a great, extensive range of sports , it is the ideal place for a tennis season preparation camp or a nice tennis holiday.
