One of our tennis hotels is located there, namely the family and sports hotel Kärntnerhof , which we would like to introduce to you from a different perspective the themed special “Tennis & Culinary in Carinthia” An absolute highlight of your tennis holiday in the four-star hotel will definitely be the excellent hotel cuisine . This is what the Kärntnerhof is known for. A delicious meal after a day of tennis on the hotel's three clay courts is simply part of a successful tennis holiday, right? Chef Markus Eber tells us how the Kärntnerhof uses regional products and what he sees as Alpine-Adriatic cuisine. We asked chef Markus Eber a few questions about slow food and Alpine Adriatic cuisine. Read how the hotel puts these two things into practice every day.

 Carinthian Slow Food – that stands for great regional and high-quality products that you work with in the hotel. Where do you get your products (meat, fish, cheese, etc.) from and do you have a particular favorite product?

We are a Carinthian Genussland company and source products from our own farm, such as: B. the young cattle as well as from reliable producers from the region, e.g. B. local pork, fish from the Feld am See fish farm, potatoes from Lower Carinthia, dairy products from Kärnten Milch and local vegetables from the Robitsch company in Carinthia. We refine our dishes with herbs from our own garden.

 Carinthia is known for its so-called Alpine-Adria cuisine: how would you define this cuisine? What makes this cuisine particularly delicious?

 The Alpe-Adria Culinary combines the culinary arts from three countries: namely Carinthia, Friuli-Venezia Giulia and Slovenia. The mixture of down-to-earthness and Mediterranean lightness is what makes Carinthian cuisine so special.

 What is your personal favorite Carinthian dish that you serve in the hotel?

Gegentaler Käsespätzle: prepared with tasty Mölltaler mountain cheese, onions and chives from our own garden.

 What should a TennisTraveller definitely eat when visiting Carinthia (e.g. in a rustic alpine hut)?

Enjoy a fresh, fluffy Kaiserschmarren from the pan or a hearty Carinthian snack with delicious sausage and cheese specialties from the region.

The recipe from the Tennishotel Kärntnerhof by chef Markus Eber: Gegentaler Käsespätzle

preparation

• Melt the butter in a pan and fry the finely diced onion until it is nice and golden brown.
• Prepare a spaetzle dough from the above ingredients.
• Using a spaetzle sieve/spaetzle slicer, scrape the dough into boiling salted water and let the spaetzle cook for 2 – 4 minutes. Remove with a slotted spoon and rinse briefly under cold water.
• Now add the spaetzle to the pan with the fried onions.
• Now the dish is sprinkled with grated mountain cheese and au gratinated in the oven at 200 degrees Celsius for about 10 minutes.

My tip: Garnish the dish with fresh chives!
