Chef Fabian Leinich 's recipe combines the freshness and tanginess of apple, avocado, tomato and herbs with lots of turbo energy from chickpeas and quinoa. For everyone who wants a power boost: cook it straight away, enjoy it and get started!

This is what you need for the POSTHOTEL ACHENKIRCH KRAFT BOWL

• 200g chicken breast
• 200g meadow herb salad (chickweed, yarrow, mixed herbs and lettuce)
• 40g chickpeas
• 30g quinoa
• 1 avocado (guacamole)
• 1 small tomato
• 1/2 lemon squeezed
• Salt, pepper and some chili (cayenne pepper)
• 1/2 apple
• 10g almond leaves
• 5g goji berries
• 10g Schüttelbrot

preparation

• Cut chicken breast into strips and fry. Place the salad in a bowl and top with the cooked chickpeas and cooked quinoa. Cut the apple into small cubes and add it to the salad.
• Make guacamole: Halve the avocado, remove the core and remove the peel. Mash finely with a fork. Add the diced tomatoes and season with lemon juice, salt, pepper and chili. Form the finished guacamole into a cam using two spoons and drape it over the salad.
• Place the chicken breast strips on top and finally garnish with almond leaves, goji berries and broken shake bread and serve!
